Vazhapindi Payar Thoran | Banana Stem Stir Fry Recipe | Kerala style

Vazhapindi Payar Thoran

Vazhapindi Payar Thoran is one of the many dishes commonly made in Kerala. This dish is very nutritious as the Vazhapindi (banana stem) is rich in iron content and fibre, which in turn helps in relieving constipation and loose weight. Another benefits of having this is, it helps in controlling your cholesterol and blood pressure levels. So, its a good idea to have it once in a while.

My cousin sister made it for me and that’s when I started liking it. I started consuming this dish regularly when I was pregnant. As banana stem is rich in fibre and constipation is a very common problem during pregnancy. Including this dish into my diet was of great help.
Here, I have used whole green moong as a combo with banana stem. Instead you can use red cowpeas (Vanpayar as said in Malayalam) as a combo with banana stem and rest of the procedure is same. So, let’s see to how to make it.

How to make Vazhapindi Payar Thoran | Banana stem with green moong with step by step photos:

Step 1: Soak the beans you are going to use in water overnight or 6-8 hours. Here, I had soaked whole green moong. After it has doubled in size, discard the water and add the beans to the pressure cooker with enough water just to cover it. Add salt and turmeric and pressure cook for 5 minutes. Keep it aside.

Step 2: Discard the outer part of the stem using a knife.
Step 3: Next, you will cut it in half an inch thickness as shown in the picture below. Scrape and take out extra fibre coming out of each pieces and dip in water to avoid darkening.

Step 4: Take 2-3 pieces together and chop it small. Keep it immersed in water till next use.

Step 5: Grind all the ingredients mentioned under ‘To grind’.

Step 6: Heat oil in a pan and splutter mustard seeds, followed by red chillies and few curry leaves.

Step 7: Add the banana stem. Mix well, cover and cook for 5 minutes.

Step 8: Add the ground mixture , cooked moong, red chilly powder and turmeric powder. Mix well, cover and cook for another 5-7 minutes.

And its ready to serve as side dish with rice.
