Vegetable Rava Upma Recipe | Rava Khichadi | Sooji Upmais one of the easiest and healthy breakfast enjoyed all over the world. It is one of my go-to dish when I am out of time or when I need to cook for myself and li’l E. Li’l E is a big fan of vegies(touch wood!), which makes me stop thinking of what to make. Just throw in some colourful vegies and it will be ready in no time.
As a child, I always used to dislike upma, whether it be plane or with vegies. But eventually I developed a liking towards it and enjoy eating it steaming hot along with any chutney.
If you think the amount of oil or ghee mentioned in the recipe is more than required, you can substitute it with only 2 tbsp of oil/ghee and add half cup more water to the said measurement. But not to worry it will become dry after some time. If you want it to be nice soft like restaurant style, then you have to use oil generously. This is so simple to make. Heat oil/ghee to a wok. Splutter some mustard seeds. Saute chopped onions, slit chillies and crushed ginger till slightly translucent. Keep the required water for boiling in a seperate container.
Add all the veggies. Cook it for 5-7 minutes. Add rava and fry for 2 minutes.
To this add chopped coriander leaves. Mix well and add the boiling water, sugar and simultaneously mix well to avoid lumps. Close with its lid and turn off the flame. Let it sit for 5- 7 minutes.
Serve hot along with coconut chutney.

Ingredients
- 1 cup Rava
- 2 cups hot water
- 1/4 cup oil + ghee
- 3/4 tsp Salt
- 1 tsp Mustard seeds
- 2 nos Green chillies
- 1 no Onion chopped medium
- 1/2 inch ginger optional
- 1/3 cup fresh peas
- 1 no carrot chopped small
- 3-4 no beans chopped
- 1 spring curry leaves
- 1/2 tsp Sugar
- handful coriander leaves
Instructions

- Add all the veggies (carrot, beans & peas). Cook it for 5-7 minutes. Add rava and fry for 2 minutes.
- To this add chopped coriander leaves. Mix well and add the boiling water, sugar and simultaneously mix well to avoid lumps. Close with its lid and turn off the flame. Let it sit for 5- 7 minutes.
- Serve hot along with coconut chutney.
