You all must be familiar of hummus and its health nutrients. It is a great source of plant-based protein. And it is recommended to have a protein-rich food, right at the beginning of the day, as it fills your tummy quickly, making you to less bing on other unhealthy snacks.

So, today I’ m gonna share with you this power sandwich called vegetable hummus sandwich. As from the name itself, you can make out what all things goes in. Some hummus of course and your favorite veggies. And you know how easy it is to combine and make a sandwich. Make sure to use a whole wheat bread. Unfortunately, when I planned to make this sandwich, I could’nt find a whole wheat bread for myself. So, I had to adjust with this white bread.

So, here we go,

 

How to make Vegetable Hummus Sandwich with step by step photos:

1. Combine cooked chana, till (white / black), garlic cloves, olive oil and lemon juice in a food processor. Add additional lemon juice for desired consistency. This spread can be refrigerated for further use.

 

 

2. In a greased skillet, on low heat, mix vegetables, egg / mashed potatoes, spices and cook until mixture is done.

3. I slightly mashed the whole mixture, so that the sandwich will hold together easily.

 

Assembling for sandwich:

Option 1: (Using Stove top)
Toast the bread slice. Spread a tbsp of hummus over each slice of toasted bread, then add a small portion of vegetable-egg / mashed potato mixture and cover with the other slice.

Option 2: (Using Toaster)
Layer the spread and filling on the bread slices. Then place it on a greased toaster. Toast it for 5-7 minutes or till it is golden brown.

Variations to this sandwich:

1. You can use different flavors of hummus.
2. Here the vegetables I have used were cauliflower, bottle gourd, carrot, green peas. You can even use thinly sliced carrot, capsicum, cabbage, cucumber and some greens like spinach. These veggies won’t even need cooking. You can enjoy it raw and the sandwich will be nice crunchy.

Notes:

1. Leftover hummus can be enjoyed with some raw veggies as a snack.
2. Next time, whenever you are making Chana Masala or any mix Vegetable curry, don’t forget to keep little of them aside and refrigerate to make this sandwich for later.

Vegetable Hummus Sandwich

Super healthy vegetable hummus sandwich packed with multi nutrients!

Ingredients
  

For Hummus:

  • 1/2 cup cooked Kabuli Chana Bengal gram
  • 1 tbsp Sesame seeds / Till White or black
  • 2 no Garlic cloves big crushed
  • 1 tsp Olive Oil
  • 2 tsp lemon juice

For Vegetable Mix:

  • 1 cup cooked assorted vegetable
  • 2 no eggs vegetarians can use mashed potato
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Handful Coriander leaves chopped
  • Whole wheat bread Slices

Instructions
