This Pumpkin Carrot Soup is super quick, made with few ingredients, is ready in a minute. Flavourful, hot and spicy, just perfect for the weather.

I usually used to make this version of soup without any carrots added to it. But, this time as I had a carrot which I just wanted to finish it off. Made use of it! You can opt out carrot and it’s equally delicious. Do try this out and let me know your feedback.

Ingredients
  

  • 250 gms Pumpkin cubed
  • 1 no Carrot medium, disc
  • 2 no Garlic cloves
  • 1 no Onion roughly cut
  • 1 no Green Chilly
  • 1/4 tsp Black Pepper Powder
  • 1 cup Water
  • Salt to taste

Instructions
 

  • Peel and cut all the vegetables.
  • In a pressure cooker, add all the ingredients. Cover and cook for 5 minutes.. Switch off the flame.
  • Once the mixture is warm, grind it to a smooth paste.
  • Add hot water as per the consistency you want. Check for salt.
  • Garnish with roasted pumpkin seeds and serve hot.

Notes

If you are making it for kids, avoid using green chilly.
