 Ethakka Vilayichathu is a Kerala snack, prepared with Kerala Banana or Nedrapazham. Apart from all it’s health benefits, the dry fruits and seeds that I have added makes it a lot more nutritious. Usually it is enjoyed as a snack, but it works as a great breakfast option too.

Recently, one of our relative from Kerala sent us a big batch of Nedra banana. Preparing this for breakfast seemed to be good option as it took very less time to prepare. Maximum amount of bananas got used up and with all the health benefits our tummies were the happiest.

I can assure you, this will be an add-up to your next quick and healthy breakfast list. And how about a perfect after-school snack for your little ones. They are gonna love it. A bonus to this is they will have a better bowel movement the next morning. 😉

Here’s the step by step photos for preparing Ethakka Vilayichathu:

1. Cut the bananas into chunks of your choice. Heat a pan with a tablespoon of ghee. Sauté it till the bananas are caramelised. Transfer it to a plate.

2. In the same pan, add ghee again and all the dry nuts and seeds. Fry them till golden brown. Now add grated coconut.

3. Add cardamom powder, caramelised bananas, jaggery syrup and a pinch of salt. Combine everything well and it’s ready to serve hot or cold.

Ingredients
  

  • 1 tbsp Ghee
  • 4 no Nedrapazham Kerala banana
  • 1/4 cup Cashews
  • Handful Almonds
  • 3 tbsp Melon seeds
  • 3 tbsp Brown rice flakes Aval / Brown Poha
  • 1.5 - 2 cup Coconut grated
  • 1 tsp Cardamom powder
  • 1 tbsp Jaggery syrup

Instructions
