Baingan Aloo Sabzi – No onion no garlic recipe | Brinjal Potato Curry
Baingan Aloo Sabzi or Brinjal Potato curry, super quick and easy dish to make. It’s a no onion no garlic recipe with step by step photos.
This very well goes even with phulka or plain paratha. Here, I used boiled potato. So, added it after brinjal was cooked for 1 whistle. If you prefer to use raw potato, add it after adding cumin seeds and cook for few minutes. As, potato takes longer time to cook as compared to brinjal.
This curry is at it’s simplest and tastes great. You should definitely try it and let me know.
How to make Baingan Aloo Sabzi, brinjal potato curry recipe, no onion garlic recipe with step by step photos:
1. Wash brinjal. Cut its stem, cube it and immerse in water till you prepare other things. Heat vegetable oil in a pressure cooker. Splutter jeera.
2. Drain and add brinjal. Mix well. Add hing and remaining masalas; turmeric powder, coriander powder, chilly powder and garam masala.
3. Now add chopped tomatoes. Mix well. Cover the cooker. Cook for a whistle.
5. Turn off the flame. Open cooker. Mix and serve Brinjal Potato Sabzi hot with purior chapati.

Ingredients
- 450 gms Purple brinjal cubed.
- 1 big Potato boiled cubed
- 2-3 tsp Vegetable oil
- 1 tsp Jeera / cumin seeds
- 1 pinch Hing
- 1 nos Tomato chopped
- 1/4 tsp Turmeric powder
- 1 tsp Coriander powder
- 1/2 tsp Chilly powder
- 1/2 tsp Garam masala powder
- 1 handful Coriander leaves washed chopped
- 1/4 cup water
- Salt to taste
Instructions

- Drain and add brinjal. Mix well. Add hing and remaining masalas.
- Now add chopped tomatoes and water. Mix well. Cover the cooker. Cook for a whistle.
- Open the lid and add boiled potato and chopped coriander leaves. Cover and cook for another 1-2 whistles.
- Turn off the flame. Open cooker. Mix and serve with puri or chapati.
