Lady’s finger stir fry is one of the easiest dish you can have it with steaming hot rice. This is one of my MIL’s recipes. She makes yummy tamilian food. Yes, my husband is a native of Dindigul, located in Tamil Nadu. If never heard of, it’s famous for RockFort and is neighbor to Kodaikanal. I never heard of this place before marriage (poor GK :().
Anyway, coming back to the recipe..You can make this fry in no time. No need of chopping the onions and crushing ginger and garlic. Lady’s finger itself has a great taste and filled with nutrients. I love its aroma, while it’s on the stove.. emhh!!
Whenever, I buy lady’s finger, I make sure that I make some dish out of it within 1 or 2 days.. I really had bad experiences storing it. If you have any tips, please let me know in the comments below.
How to make lady’s finger stir fry:
Wash lady’s finger under running water or you can dip it in water for 5- 10 minutes. Wipe it dry and cut the head and tail. Now chop it fine.
Heat a non-stick pan. Pour oil, splutter mustard seeds, then curry leaves and sliced lady’s finger.Keep the heat on high for 1-2 minutes and keep stirring. It will be sticky for first few minutes.
Lower the flame and let it cook till it is half done. Keep stirring in between to avoid burning as we are not adding any water.
Add pepper and salt and mix well. let it cook on low for another 2-3 minutes. If you want crispy lady’s finger, cook it for more time till you get the right texture.
Serve it hot with rice and dal. You can even have it like that.. 😉
