 Winter calls for soups!! Hot and spicy! Healthy and seasonal! So, here I bring you my humble and simple Pumpkin Carrot Soup!

Pumpkin Carrot Soup

This Pumpkin Carrot Soup is super quick, made with few ingredients, is ready in a minute. Flavourful, hot and spicy, just perfect for the weather.

I usually used to make this version of soup without any carrots added to it. But, this time as I had a carrot which I just wanted to finish it off. Made use of it! You can opt out carrot and it’s equally delicious. Do try this out and let me know your feedback.

So, here it goes

 

Pumpkin Carrot Soup Recipe

Preparation Time: 10 minutes

Cooking Time: 5 minutes

Serves : 4

Measurements used:- 1 cup = 250 ml; 1 tbsp = 15 ml; 1 tsp = 5 ml

Ingredients:

250 gms Pumpkin cubes

1 medium Carrot, cut in disc

2 no Garlic Cloves, big

1 no medium Onion, roughly chopped

1 no green chilly

1/4 tsp Black Pepper Powder

1 cup Water

Salt

Instructions:

1. Peel and cut all the vegetables.

2. In a pressure cooker, add all the ingredients. Cover and cook for 5 minutes.. Switch off the flame.

3. Once the mixture is warm, grind it to a smooth paste.

4. Add hot water as per the consistency you want. Check for salt.

5. Garnish with roasted pumpkin seeds and serve hot.

Note:

If you are making it for kids, avoid using green chilly.
